Fresh-Over Ziti

What do you do with left over Ziti in sauce?
 It's good when its fresh and hot, but the next day , it's just tired and boring.



Welcome to the Fresh-Over posts. We will use fresh ingredients to give a left over a fresh over and it will sing to your taste buds.





Here is what we did:  Put the Ziti in a baking dish and layer home base salsa over the top. How much is up to your taste and how much extra kick you want.




 Then add fresh blanched spinach, be sure to pat your spinach dry. Next add red and jalapeno pepper strips on top of this, but remember this is another kick up the taste ladder.


Shred the cheese of your choice, we used a soft mozzarella.


Bake at 425 degrees for 25 to 30 minutes, remember its a reheat, cover the dish while in the oven, uncover the last 10 minutes if you want the top to brown.


  Let set 10 to 12 minutes to cool.Garnish the top with fresh cilantro when you are ready to serve to add even more fresh flavor.  Then serve it and enjoy the flavor of a Fresh-Over.


On the Yum scale this is a sure bet at 8, I loved it, and a left over was saved to satisfy another day.
