Salsa or Corn, which came first

In  our continuing, efforts to bring you all the best in different and tasty, Salsa treats, are recent experiments have lead us to, The Corn Cookie, its still evolving, but this version is GOOD.



The Corn Cookie

one cup of butter
half a cup of brown sugar
two eggs
one tsp. baking soda
one tsp. salt
one tsp. vanilla
one cup of flour
one and half cup of corn meal

first cream the butter, sugar, eggs, baking soda, salt, vanilla and half cup of corn meal
then mix in the remaining corn meal and the flour
put on a cookie sheet, spray first, place just like you would any cookie
bake at 375 degrees, for 8 minutes or just as they go a little golden, do not over cook

We found our new cookie friend could go both ways,

on the sweet side we added a topping of honey and butter, whipped together

on the spicy side we added a topping of Home Base Salsa
I liked them both, but it was the corn cookie that could stand on its own, and was very good plain.
